Caramel Corn

I love caramel corn! There use to be one movie theater around me that would offer caramel corn among their snacks and a few times I would go just to purchase the caramel corn and leave without seeing a movie, however, they have since changed hands and no longer offer it. That’s okay though because this caramel corn is so much better and it is so easy to make. It’s versatile too. You can add nuts or dried fruit to it, or you can drizzle chocolate over it (milk chocolate tastes better than semi-sweet). It also makes a great gift and feeds a crowd. Give this a try, I know you’ll love it!
Ingredients
1 cup butter
2 cups packed brown sugar
1 teaspoon salt
1/2 cup light corn syrup
1 teaspoon baking soda
Directions
Preheat oven to 200 degrees F. Over medium heat, combine first 4 ingredients and boil for 5 minutes. Remove from heat; stir in baking soda. Stir well. Pour over 8 quarts popped corn. Stir to coat well. Bake in large roaster or pan for 1 hour, stirring every 15 minutes. Spread on waxed paper to dry.
Note: For the large roaster I buy one of the throw away tin foil pans at your local grocery store, usually the biggest I can find. It makes for easy clean up!
